It may be easier to pull it off at the other end - from the heater end - I seem to remember it's easier to get at.

Ride height is measured from a certain point on the chassis (not easy to describe) so here is a page from the workshop notes which shows where to measure from (little picture on the right):

Just a thought - it might be worth checking the body mounting bolts at the front if there seems to be a lot of rattles.

Like Paul says, I think you should be able to do it without completely removing the dash, but I think removing the instrument binacle would make life much easier.

You definitely have to take the steering column out, because it's bolted to the pedal box. I'm not sure if you would have to take the whole dash out - you might get away with just the instrument panel. The thermocouple does stop the evaporater getting too cold - it stops it freezing up, but it still allows it to get down to ~ 4 deg C. Can you hear the aircon cycling on and off regularly? If it is cycling regularly the thermocouple/amplifier are probably working OK. (What year is your car?)
