I'll just go with something close to the original. I've not given it much thought yet, still working with my wife to make progress on the seats, but home schooling leaves little time and energy. As your Mrs is handy with the needle and thread, get the standard woolies covering and sew a backing piece of material (curtain liner or muslin type) to it. Sew in lines every 10 cm to create the pleated padded look.
Yeah, I've seen that done, looks good. But with a glass sunroof taking up much of the roof above the driver, it'll only really be noticeable for the roof above the rear seats.
